Ingredients

  • 1 lb (454 g) cooked prawns, peeled and deveined
  • 4 cups (120 g) mixed lettuce leaves
  • 1/2 cup (120 ml) cocktail sauce
  • 1/4 cup (60 ml) mayonnaise
  • 1 tbsp (15 ml) lemon juice
  • 1/4 cup (40 g) diced cucumber
  • 1/4 cup (40 g) diced red onion
  • Salt and pepper, to taste

Instructions

  1. In a small bowl, combine the cocktail sauce, mayonnaise, and lemon juice. Mix well to make the dressing.

  2. In a separate bowl, toss the prawns, diced cucumber, and diced red onion. Season with salt and pepper.

  3. Place a bed of mixed lettuce leaves on each serving plate.

  4. Spoon the prawn mixture over the lettuce.

  5. Drizzle the dressing over the prawns and garnish with lemon wedges, if desired.

  6. Serve immediately and enjoy!
