Hygge in Germany

After chilling the dough, roll it out about 1/4 inch thick. Cut deep dents into the dough where the outer edges of the house will be (don’t cut all the way through). Then using a butter knife, spoons or whatever comes in handy for the shape make slight dents for windows, roof decoration, doors etc. 

Bake in the oven at 375 Fahrenheit for about 10 minutes. Remove the baking sheet from the oven, cut away the edges of the house and bake for another 10 minutes. Let cool completely, use icing sugar to give the houses a dusting. 

Spiced Spelt Porridge with Honey Ghee Drizzle

1/2 cup spelt semolina
2 cups almond milk
1 tsp spice mix
1 tbsp ghee
1 tbsp honey
some granola and fruit for garnish

Over medium heat cook semolina with spice mix and almond milk until thick. Pour into a serving bowl. Mix ghee and honey. Drizzle over porridge. Garnish with granola and fresh fruit. 

Chai Pavlova with Cherry Almond Compote

3 egg whites
1/2 cup xylit
pinch of salt
pinch of lemon juice
1 tsp chai spice mix

1 1/2 cup cherries
1/4 cup xylit
1 tsp almond essence
1/2 lemon, juiced

1/2 cup cream
1 tbsp xylit

Pomegranate for garnish

To make the pavlova mix egg whites and xylit in metal bowl and gently heat in a water bath. Add salt and lemon juice. Whisk constantly until sugar is dissolved. Remove from heat and beat on high speed until glossy stiff peaks form. Gently fold in ground spices. Spread in circle form on a baking tray lined with baking paper and bake at 300 Fahrenheit for about an hour. Try not to open the oven door. Let cool completely. 

Place pitted cherries, xylit, almond essence and lemon juice in a small pot and heat. Stir well and cook until syrupy. 

Beat cream with sugar until stiff. 

To assemble the pavlova place cream on cooled pavlova, then pour over almond cherries and garnish with pomegranate seeds and icing sugar.
